Cherry Almond Buckle

In the latest issue of Cuisine at Home, they had a recipe for Cherry Almond Buckle. It looked good. We had some cherries that needed to be used, eaten, something! We even had the amerreti cookies! First thing, I had Lon smash the ameretti cookies for the topping with one of his hammers. Sorry I did not get a picture of that.
Lon wanted to pit the cherries.
So he did.
He took his job seriously.
He put the pitted cherries onto the batter and presses them in. He wanted me to read the recipe before we started, and he was so proud of himself for remembering some of the steps. I put the topping on (butter, crushed ameretti cookies, almonds, etc) and we baked it! It turned out wonderful! We will make this one again. Watch for more cooking with Lon!

Not quite all the cherries were pitted....found one at lunch.

Excellent. Now that Lon is familiar with the cherry stoner, its just a hop skip and jump to the Cuisinart! :)

BTW, recipe sounds incredible.

He already knows how to start and stop the Cuisinart, and LOVES doing that.
The recipe is good, not so high in sugar... But it is pretty much all carbs.
